A Supposedly Clever Winemaking Protocol I’ll Never Do Again* Puncheon-fermented rosé in 100% new wood seemed like a great idea at the time, and the wine is lovely—but it took 10 months to ferment, inducing massive consternation in the winemaking team. Deep strawberry pink with a faint peach cast, the wine offers brilliant aromas of fresh berries, kiwi, melon, and almond. On the palate it delivers expansive lush fruit, particularly strawberry and melon, with beautiful acidity and a lingering finish. A perfect apéritif wine for warm days, but also a perfect partner at the table. Pair it with warm goat cheese, salads, poultry, and all manner of seafood. * With apologies to the late D.F.
