Picpoul, literally “lip-stinger,” is a variety of Languedocian
origin, adopted as one of the permitted grapes in Châteauneuf-du-
Pape. Exceptionally lemony (snicket) with subtle suggestions of
melon, Asian pear, pea flower and mint in the nose. On the palate,
salty citrus rind (!) and perhaps overtones of cherry. Picpoul is
said to possess a certain degree of savory/saltiness, stimulating
the palate in its quest for satiation/bliss. On that subject, one
might suggest: oysters on the half-shell, indeed any and all
shellfish, corn pancakes, grilled fish or codfish brandade.
