The Vin Gris Réserve represents a rather unorthodox method of élevage, whereby the wine reposes anaerobically in 5-gallon glass demijohns (bonbonnes) and is stirred monthly. This unique treatment imparts a subtle savoriness and toasty creaminess to the wine.
