In the nose, wild strawberry, mint, white pepper, anise and allspice. In the mouth, strawberry-rhubarb and beetroot, which is one of the fail-safe signifiers of Pinosity. This is a more delicate expression of Pinot, but one that is incredibly true to Pinot’s Platonic essence.
The genius of Pinot Noir has often been celebrated; Pinot Pilgrims are always kneeling bareheaded in one vineyard or another. Maybe Pinot’s genius is the one of the polymorphous perverse shape-shifter, the Peter Sellers of cépages. The ’12 is all about elegance and finesse; if one were to compare it to a Burgundy it would be Savigny-lès-Beaune or Monthelie.
Food Pairing Notes
Apple brined turkey, grilled duck breast, goat cheese ravioli with wild mushrooms, root vegetable hash.
