Discreet suggestions of pineapple, lime blossom and other unnamed citrus in the nose. This wine has been bottled without filtration and therefore may be partly cloudy with an occasional chance of precipitation.
Being a Chardon-nay-sayer is as easy as A,B, C, but one should never say never (or Nevers) again. So, let’s get this straight: We are neither big fans of Chard, either in an over-oaked or overwrought style. This is a single vineyard bottling of Chard (o, nay!), yes, and Pinot Gris, yes, harvested ensemble from the litorally proximal and hyper cool Spanish Springs vineyard and then co-fermented. This is a wine for very patient acid-freaks, if that is not a gross contradiction in terms.
Spicy crab bisque, roast and stuffed chicken or turkey, salmon pasta with cream sauce, wild mushroom tart topped with Chardonnay/Pinot Gris Buerre Blanc.
