This wine is a trueVin Gris, which is to say, made from bespoke grapes (not aby-product of red wine production), harvested at the appropriateripeness level for its style, and receiving but minimal skincontact. The essential principle here is that less is truly more.The wine does not overwhelm one with fruitybombasticity; it’scharms are seductively subtle. Discreet nose of alpine strawberry,evolving into a refreshing mintiness with additional air andwarming. On the palate, a beautiful natural crispness and a greatsleek and savory texture, in virtue of the extended leescontact/&lt;i&gt;bâtonage&lt;/i&gt; the wine received postfermentation.Possibly the most elegant and complex Vin Gris de Cigare todate.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Tasting Notes&lt;/strong&gt;&lt;br /&gt;Fresh and bright with a shell pink color reminiscent of a Côtes deProvence Rosé. Since this is a true Vin Gris, and perforce receivesbut the most minimal skin contact, it is very discreet both in hueand aromatic profile. There are hints of wild strawberry, whitecherry, ripe peach, and the barest whiff of spearmint, giving wayto notes of strawberry, blood orange, and grapefruit. A very lean,mineral-intensive structure draws one into the wine, rather thanassaults one with a riotous floral/fruity bombardment. Perhaps mostcompelling is the wine’s tremendous food-friendliness. Wonderfulwith traditional Provençal fare including charcuterie, pâté, saladeniçoise, and the aïoli platter, it’s an incredibly flexible partnerat the table, complementing everything from internationalcuisine—curries, tagines, or &lt;i&gt;chiles rellenos&lt;/i&gt;—to a vast arrayof seafoods, poultry, salads, and cheeses. Delicious today but willdevelop added richness and aroma with an additional 12-24 months ofbottle age.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Vineyard | Production Notes&lt;/strong&gt;&lt;br /&gt;The grenache for our Vin Gris came from bespoke sections of theMcDowell Valley, Mesa Verde, Rancho Solo and Ventana Vineyards,harvested at the appropriate maturity level for this elegant styleof wine. This pink wine is asdifferent from our Vin Gris as pink and day. The Vin Gris is paleand delicate, made primarily from the lightest pressings of thedelicate grenache; Not This Pink*, mourvèdre-based, is a properrosé, with a greater degree of maceration (maybe 6 hours) on theskins before &lt;i&gt;saigner&lt;/i&gt; (or bleeding). Robustly, almost luridlycolored, this is not a pink for the faint of heart. This is a winewith real body, presence, even, dare I say, a bit of tannin. Youcan consume it this summer, but it will also handsomely repaycellaring, and will be great next summer and the summer afterthat.&lt;br /&gt;&lt;br /&gt;The wine is fragrant—watermelon, cassis and dominantly blackberry,not just the fruit but the leaf as well, indeed the whole bush.You’re in the underbrush here, the garrigue. While this wine isnominally pink in color, use it as you would a light-bodied red andserve with dishes that have a bit of fat. On thepalate it delivers expansive lush fruit, particularly strawberryand melon, with beautiful acidity and a lingering finish. A perfect&lt;em&gt;apéritif&lt;/em&gt; wine for warm days, but also a perfect partner atthe table. Pair it with warm goat cheese, salads, poultry, and allmanner of seafood.&lt;br /&gt;&lt;br /&gt;* &lt;i&gt;With apologies to the late D.F.
