A &lt;i&gt;Getrunkenexperiment&lt;/i&gt;.&lt;br /&gt;&lt;br /&gt;Query: What might a blend of apple, pear, and quince taste likenaturally fermented (with indigenous yeast)? Result (notsurprisingly): The ethereal suggestion of pineapple quince; thepungent, heady, dusky perfume of pear; and the earthy succulence ofapple. I never thought I'd see... a pome as lovely as Querry. Crispin acidity and bone dry, Querry is the perfect accompaniment to,well, essentially everything. It is composed of virtuallyeverything, but most significantly: 58% pear, 33% apple, and 9%quince.&lt;br /&gt;&lt;br /&gt;Excellent with charcuterie, Asian food, seafood, and poultry—fareas humble as meat pie or as elegant as lobster. Querry pears witheverything. The Wine Formerly Known as Clos de Gilroy(TWFKaCdG) pays homage to the quaint, rustic town of Gilroy, thespiritual locus of all matters alliaceous. However, note well, thefruit for this wine does not, despite its name, derive from Gilroy(&lt;i&gt;clos&lt;/i&gt;, but no Cigare), but instead from the Alta Lomavineyard in Greenfield (a particularly cool site for grenache) thegravelly Alamo Creek Vineyard near Santa Maria and some trulyancient mourvèdre vines in the sleepy Sacramento Delta town ofOakley, CA. Grenache is really the star of the show, and the wineexhibits all the hallmarks of exceptional coolth—brightraspberries, red fruit, a strong suggestion of white pepper, and asupple, lingering finish.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Tasting Notes&lt;/strong&gt;&lt;br /&gt;The strawberry-rhubarbity of grenache is complemented by somediscreet meatiness from the mourvèdre and syrah’s discreet herbal,mentholated calling card. Brilliant rubescent pink with a fuchsiarim, the wine is intensely aromatic, with notes of strawberry,raspberry, white pepper, and wild herbs. Supple and mediumbodied,the dominant flavors on the palate are of red fruits: strawberry,red currant, &lt;i&gt;kirsch&lt;/i&gt;, and rhubarb. The ’12 vintage is perhapsslightly riper than Gilroy’s &lt;i&gt;d’antan&lt;/i&gt;, but remains remarkablynimble on its feet. Fruity and spicy but fully dry, this wine isthe perfect foil for all manner of grilled meat or vegetables,roasted poultry, the aïoli platter (&lt;i&gt;naturellement&lt;/i&gt;), andanything prepared &lt;i&gt;al fresco&lt;/i&gt;—especially when anointed witholive oil.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Vineyard | Production Notes&lt;/strong&gt;&lt;br /&gt;Bonny Doon Vineyard’s winemaking practice is exceptionallylight-handed, with minimal intervention and manipulation. Wecreated the 2012 Clos de Gilroy from hand-harvested grapes derivingfrom three Central Coast Vineyards. The fruit was hand-sorted,gently de-stemmed, and cold soaked to enhance flavor and colorextraction, and each lot was fermented separately. Cool as in the Blues, or at leastblue fruits: blueberry, blackberry and Damson plum. Cool as in atouch of Funk (Miles Davis and George Clinton would have loved thiswine) but in a very good way. The wine is a field blend of diverseclones, which really enhances the complexity of the wine. In thecellar, it is subjected to a reductive &lt;i&gt;élevage&lt;/i&gt;, a practicethat allows for the development of extremely sophisticated earthand animal tones in the finished wine. This wine will workexceptionally well with anything that has been spit-roasted, viz.lamb, spare ribs. Exceptionally lemony (snicket) with subtle suggestions ofmelon, Asian pear, pea flower and mint in the nose. On the palate,salty citrus rind (!) and perhaps overtones of cherry. Picpoul issaid to possess a certain degree of savory/saltiness, stimulatingthe palate in its quest for satiation/bliss. Since thattime, this light yet vibrant white grape has become a darling ofwine geeks worldwide with its preternatural ability to pair withall types of seafood, cheese and salty dishes.&lt;/p&gt;&lt;p&gt;&lt;strong&gt;Tasting Notes&lt;/strong&gt;&lt;br /&gt;The resultant wine is crisp, enormously sleek, racy in texture andutterly varietally true. Dominant nose is citrus–Kaffir lime to bemost specific, but there’s also a vague undertone of peach. On thepalate, there is a concomitant brininess; one is reminded ofground-up oyster shells. You might well intuit that this wine justscreams for a heaping portion of &lt;i&gt;coquillage&lt;/i&gt;, a giant&lt;i&gt;monstre&lt;/i&gt; seafood platter that one demolishes in a slightlydepraved ravenous paroxysm: the sheer selfishness of&lt;i&gt;shellfishness&lt;/i&gt;. This is definitely the wine you want with youif you are summoned to the Cabinet (or &lt;i&gt;Kabinett&lt;/i&gt;) of &lt;i&gt;Dr.Calamari&lt;/i&gt;. This wine is a trueVin Gris, which is to say, made from bespoke grapes (not aby-product of red wine production), harvested at the appropriateripeness level for its style, and receiving but minimal skincontact. The essential principle here is that less is truly more.The wine does not overwhelm one with fruitybombasticity; it’scharms are seductively subtle. Discreet nose of alpine strawberry,evolving into a refreshing mintiness with additional air andwarming. On the palate, a beautiful natural crispness and a greatsleek and savory texture, in virtue of the extended leescontact/&lt;i&gt;bâtonage&lt;/i&gt; the wine received postfermentation.Possibly the most elegant and complex Vin Gris de Cigare todate.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Tasting Notes&lt;/strong&gt;&lt;br /&gt;Fresh and bright with a shell pink color reminiscent of a Côtes deProvence Rosé. Since this is a true Vin Gris, and perforce receivesbut the most minimal skin contact, it is very discreet both in hueand aromatic profile. There are hints of wild strawberry, whitecherry, ripe peach, and the barest whiff of spearmint, giving wayto notes of strawberry, blood orange, and grapefruit. A very lean,mineral-intensive structure draws one into the wine, rather thanassaults one with a riotous floral/fruity bombardment. Perhaps mostcompelling is the wine’s tremendous food-friendliness. Wonderfulwith traditional Provençal fare including charcuterie, pâté, saladeniçoise, and the aïoli platter, it’s an incredibly flexible partnerat the table, complementing everything from internationalcuisine—curries, tagines, or &lt;i&gt;chiles rellenos&lt;/i&gt;—to a vast arrayof seafoods, poultry, salads, and cheeses. Thegreat white Cigare is not unlike the great white whale; rarelyseen, difficult to catch, yet its name is legend. It’s a rich,savory wine with greater power and extraction than one typicallyfinds at Bonny Doon.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Tasting Notes&lt;/strong&gt;&lt;br /&gt;Pale gold with green-gold highlights, the grenache blanc dominantblend has a somewhat different aromatic profile from the 2010vintage. We used the last of it in thisdreamy blend that combines the rich cherry bomb character of freisawith the earthy leathery notes of sangiovese. The freisa wasstomped by Randall's daughter Amélie and her Orchard Schoolclassmates. After fermentation, the freisia and sangiovese wereblended and aged in tank and barrel for 12 months beforebottling.&lt;/p&gt;&lt;p&gt;Intoxicatingly lush aromas of strawberry, pomegranate, rosepetal, and rosemary lead you to expect a fruit-driven monster, butthis is utterly not the case. The wine is actually quite savory,with lovely red berry and cherry fruit, moderate acidity. and drycocoa powder-like tannins on the finish. Elegant, nuanced andpositively earthy, the '07 Imagine is one of the finest club memberexclusive reds we have ever produced.
