I love retro-styles, both in cars and in wine, and I think that there is a very interesting collision of the senses when one marries a proper, complex red wine with tiny bubbles (made à la champenoise). Note, the fizz seems to be a fiendishly effective carrier of the haunting berry + funk quality of the Pinot. There is a wonderful spicy/minty, almost fennel or Fernet-like note in the nose.
People who know me know or at least strongly suspect that when I get a notion in my head, it becomes very difficult to let it go, at least until it has been worried to death, i.e. carried out to some exhaustive and exhausting result until some modicum of common sense eventually prevails. Let’s just come out and say it: I have a highly fraught relationship with Pinot, that is to say, unless I can contrive to do something utterly original and distinctive with Pinot, I’d rather leave it to the rather more adept Burgundians. But this does not preclude Sparkling Red Pinot!
Food Pairing Notes
Just perfect for Thanksgiving, elegant, fragrant and a lovely counterpoint to possibly prosaic turkey and familial chatter. Pinot exists in the world, and that is a lot to be thankful for.
