Bright, vivid, almost violaceous color. The nose aggressively attacks—almost as if being at undergrad at Cal, being sprayed with the most benign pepper spray imaginable. So much so, I imagined that this variant (outtakes of our Cigare Volant blending sessions) had to have an enormous percentage of Syrah. But what I imagined was white pepper was now morphing into a high-toned cherry/ almond aroma, our old pal, benzaldehyde. (Now, that had to have come from the Cinsaut!) Further examination yielded a bit of chocolate and coconut, which, coupled with the cherry/almond quality, more or less translated into a vinous Almond Joy. Do give this wine the benefit of some time in the glass, or even better, use a decanter.
Food Pairing Notes
Grilled rib eye with grilled stone fruit (such as peaches) topped with Cambozola and fresh arugula. Bergamino di Bufala. Grilled vegetable platter. Sesame-crusted Ahi tuna steak.
