Tasting Notes
I was privileged to spend a lot of time in Gascogne, in southwest France, epicenter of the French Paradox, where ducks and geese enjoy a short but gluttonous life. This wine is not absolutely, positively as dark and dense as some tannats I’ve known, but a sort of black hole in the bottom of one’s glass is created when it is poured. Sloe plum, licorice, cassis and a bit of rhubarb in the nose, very rich and powerful in the mouth. The wine has good weight, but the tannins are surprisingly not as dense and impenetrable as one might imagine; we worked very hard in the winery to tame this beast.
Food Pairing Notes
Note, this is not a wine that you will want to serve the Queen. It is utterly rustic and is best consumed with hearty dishes. Duck of course would be ideal, but any sort of rustic daube will serve quite well. You can’t go wrong with the classic pairing of cassoulet! Other ideas include braised beef, pork belly, grilled sausage, game meat (boar, venison) stews, roasted lamb, and duck confit - any of the above served on a bed of creamy polenta with a side of roasted rapini would be just lovely. When it comes to cheeses, think aged and strong, such as Parmesan or Roquefort (in fact, Roquefort sauce over grilled steaks sounds just perfect.)
