The wine benefits enormously from decantation and we encourage you to break out (not break) your largest, most fragile balloon glassware to test-drive the aromatics on this wine. You certainly have cottoned to the fact that I’m obsessed with Burgundy; I am quite confident that in time this wine will impart a sense of aesthetic jouissance not at all dissimilar to the very satisfying sensation of enjoying a well-matured top growth Burgundy.
We have been so privileged to work with extraordinary Grenache (a proprietary clonal selection) from the Rancho Solo Vyd. in Soledad, as well as fruit from other particularly cool sites.
In recent years we’ve been experimenting with allowing grapes to air-dry for several days before crushing, allowing the stems to lignify. This enables us to use the entire grape, stems intact, in the fermentation process, a technique we employed for this wine to most cunning effect. The result is a slightly paradoxical wine; in color, it appears a bit on the light side, but on the palate there is a preternatural level of persistence; with air the wine continues unfold like an origami crane. Even more paradoxical is that while Grenache is typically cited as being the Mediterranean cépage par excellence, the fragrance of the wine can only be described as “lifted” or even alpine—minty, wintergreen, balsamic. The stem inclusion has given this Grenache a bit of astringent armor, a façade that I’m certain will drop away within the next three to five years.
Food Pairing Notes
French onion soup dumplings. Tapas spread of roasted & stuffed piquillo peppers, tortilla Española, papas bravas, and the like. Standing rib roast with Yorkshire pudding. Lamb burger. Roasted stuffed onions. Souvlaki - lamb, pork, or chicken. Kerrygold Dubliner cheese or an aged cheddar.
