In the nose, there is a hint of fraise des bois, but more vividly, black currant and cherry; one has the sensation of smelling the fruit as a more rarified flower. Bracingly crisp on the palate (the frisson of zero dosage), with just the faintest tinge of astringency, the wine lingers and finishes impeccably clean.
I remain utterly fascinated/obsessed with the use of red grapes for bottle-fermented wine. If one looks at the champenois paradigm, one eschews astringency, with the aspiration of weightless elegance. And yet, elegance can sometimes be achieved via another route, in this instance, the haunting fragrance of this singular cuvée. Low pH Grenache has a rather distinct, vivid color, indeed pale but more damask rose than, shall we say, orange.
Food Pairing Notes
You can certainly pair this wine with all manner of amusing bouches, but certainly anything in the smoked fish realm would be a home run. Other ideas include: Ceviche with mango. Kettle chip (we recommend Cape Cod brand) topped with caviar or roe, creme fraiche & chive. We recommend Tsar Nicoulai Classic Caviar or Gold Pearl Trout Roe. Thanksgiving dinner, especially with an appetizer of cranberry salsa atop cream cheese or a log of goat cheese, or with pumpkin cheesecake for dessert. Sous vide pork tenderloin with caramelized onion. Pavlova - in springtime with strawberry rhubarb, in fall with cranberry curd. Persimmon desserts, such as pudding, bread, or Fuyu tarte tatin.
